Stillwater is a small cafe in Fitzroy North. We focus on doing a few things very well: good coffee, simple food, and space to breathe.

Stillwater started in 2018 in the front room of a Victorian terrace on Scotchmer Street. The space was small, the menu was smaller, and somehow that was exactly right.
We moved to our current location in 2021 — a converted 1920s corner store with original pressed-tin ceilings and north-facing windows that fill the space with a particular kind of afternoon light. We try not to get in its way.
The coffee comes from Single O in Surry Hills. The food comes from producers we've been working with since the beginning. Nothing is over-complicated.
Stillwater is the kind of cafe you hope exists everywhere and find almost nowhere.
